CALIFORNIA CHICKEN

INGREDIENTS
(use organic where possible)

2 Tbsp butter, clarified
4 chicken breasts, boneless
2 avocados
2 tomatoes
½ cup white sauce
½ cup grated cheese

Preheat oven to 180 °C. Slice chicken into small slices. In large skillet, heat clarified butter on medium-high. Add chicken slices and sauté for 3-5 minutes, until they start to turn brown. Season chicken with salt and pepper. Peel, pit and thinly slice avocado. Cut tomatoes into thin wedges. In a medium casserole, layer chicken, avocado and tomato. Top with white sauce. Sprinkle with cheese. Bake for 30 minutes.

 

ANTIPASTO SALAD

INGRENDIENTS
(use organic where possible)
1 cauliflower
3 carrots large, thinly sliced
1 green pepper, diced
1 cup black olives
2 ½ cups spiral pasta

DRESSING
1 ¼ cups olive oil
¾ cup vinegar, cider
2 garlic cloves, minced
1 Tbsp sugar
salt and pepper

In a large bowl, toss together cauliflower, carrots, green pepper and olives. Cook pasta in large pot of boiling salted water untill tender but firm, about 8 – 10 mins. Drain and rinse in cold water.
DRESSING: combine oil, vinegar, garlic and sugar, adding salt and pepper to taste. Mix well. Pour all but 1/3 cup dressing over salad, tossing to mix and reserve remaining dressing. Cover and refrigerate overnight. Just before serving, taste and readjust seasonings and add remaining dressing if necessary.

 

BANANA AND BERRY SMOOTHIE

INGREDIENTS
(use organic where possible)
100ml trim milk or coconut water or almond milk
100ml water (add more if needed)
2 tablespoons natural yoghurt or coconut yoghurt
1 sliced banana
1/2 cup frozen blueberries
1 handful baby spinach
optional 3-4 ice cubes

Blend all ingredients in a blender until smooth and serve in a glass.

NOTE:  The contents of salvestrol capsules can be added to the smoothie.

 

Beef Bone Broth – A source of marrow-bone jelly

There is a lot of talk about beef bone broth at the moment. So, is it the nutrient dense liquor that it is purported to be? (You can read more of this article @The Daily Mail Online: published 3 March 2015, updated 25 May 2015).

There is no doubt that stock has been used in traditional cooking in many cultures for thousands of years, but modern science is struggling to explain the nutritional benefits of this culinary staple. Gelatin is a protein-rich food, and it comes out of bones when they are boiled. Bones also contain minerals which are essential to good health, so is bone broth rich in minerals? This is the question no-one can quite answer.
In an archaeology journal, the authors of a 2002 paper state that: “It is shown that cooking for brief periods of time has little distinguishable effect on bone in the short term, but that increased boiling times can …[lead to] the loss of collagen and alterations to the bone mineral [composition]….” The taphonomy of cooked bone: characterising boiling and its physico–chemical effects (Archaeometry Volume 44, Issue 3, pages 485–494, August 2002).

Yet, there is no denying that many people are experiencing the benefits of drinking beef bone broth:

BEEF BONE BROTH

INGREDIENTS

2kg Organic beef bones (shin bones are the best)
1 onion, unpeeled, cut in half or whole
2 bay leaves (fresh or dried)
1/2 teaspoon black peppercorns
2 Tbsp apple cider vinegar

METHOD:

Place the bones in a large roasting pan and roast until bones have browned (this step is not mandatory and can be skipped if time is an issue).
Place the browned bones in a Crockpot with the vegetables and seasonings and fill with water leaving at least one inch from the top.
Pour in the vinegar. Put the crockpot on low and let cook for around 8-12 hours. (you can leave let them cook for 48 hours for maximum nutritional status, but 12 hours is usually fine).
For the last hour of cooking, place the bunch of parsley into the broth.
Switch Crockpot off and carefully remove the bones with some tongs. You can push the marrow out of the bones and back into the broth.
Pour the broth through a sieve into another pot to cool (most don’t strain, just take out the bones).
